Where does the time go? Here on the East Coast, it is truly winter. Too cold to really get out on regular walks with the girls so that has left time for a lot of cooking! Hope you find some inspiration this week in the links below:
Food We Ate:
Lots of “use what we have” last week before going to the store! Used this post as inspiration, and mixed it up for the family a little with some breaded chicken (easy!), served with roasted veggies and jasmine rice.
Cider Braised Butternut Chicken with Butternut Squash - How Sweet Eats - This is a favorite that I’ve literally printed out and saved. I’m out of apple cider for the season so I just cook with whatever broth I have on hand! Highly recommend.
Another night, I needed to use up some cauliflower, and was inspired by both of these recipes - Butternut Squash, Chicken & Wild Rice Casserole and Butternut Squash, Cauliflower and Quinoa Bake which I had made both before!
I ended up using: roasted cut-up cauliflower (one head), roasted butternut squash (half of a large squash, cut up small), 1 c. dry wild rice cooked, 3 sage sausages from Local Homestead broken up and cooked. We mixed together with parmesan, but could also leave separate for any picky kids!

Slow Cooker meatballs - Happily Eva After - I saw this in Lemon Stripes latest blog post, and had to pin! I’ve never made meatballs in the slow cooker, so I’ll keep you posted on how it turns out.

Step Stool - Etsy - I’ve been in need of a step stool (or two) for our bathroom sinks for a while! These look like a great option - love that you can pick the finish and that they’re all wood.
Gifts New Moms Actually Want - Lemon Stripes - Julia rounded up 10 ideas that are VERY good - check it out! I personally like the ideas mentioned of water tumbler, nursing snacks and gifts for siblings!

Have to recommend the Jay Leno episode of the Armchair Expert podcast (I was literally LOL’ing) and the Julia Louis Dreyfus episode of the Smartless podcast. She is so interesting! I didn’t know about her background at all!
2020 Reflections - Centsational Style - A great read. A lot of these posts come out as the New Year approaches, but I really resonated with what she said re: energy, and practicing awareness.
